Unfortunately, you can't.  QuantLibXL requires Excel for Windows, since Excel for Mac doesn't provide the required extensibility.

Lately, Lars Callenbach has made available a QuantLib plugin for LibreOffice Calc (see <https://github.com/lcallenbach/quantlibaddin>). It might be an alternative.
